This is a strange and surprising combination of ingredients, but the soup is incredibly rich and delicious! Serve with a dollop of sour cream and crispy bread.

Ingredients:
- ½ cup raw rice
- 2 tablespoons olive oil
- 2 medium onions, finely chopped
- 2 large red bell peppers, chopped
- 4 garlic cloves, minced
- 800 g chopped tomatoes, with juice
- 8 cups vegetable broth
- ¼ teaspoon pepper
- ¼ teaspoon chili spice (optional)
- ⅔ cup peanut butter
Instructions:
Step 1:
Heat the oil in a large saucepan over medium-high heat. Saute onion and pepper until lightly browned, stirring, adding garlic at the end. Add tomatoes, vegetable broth, peppers and chili. Reduce heat to low and simmer for 30 minutes.
Step 2:
Add the rice, cover and cook for another fifteen minutes or until the rice is tender. Stir in peanut butter and serve.
