Chicken Tempura Roll Ingredients:

  • Sushi rice, 2 cups
  • Rice vinegar, 1/2 cup
  • Frozen breaded chicken tenders, 1/2 pound
  • Fresh ginger root (chopped), 1 teaspoon
  • Chopped almonds (chopped and toasted), 1-1/2 cups
  • Low-sodium soy sauce, 2 tablespoons
  • Sesame oil, 1/2 teaspoon
  • Green onions, 3 pieces
  • 1 large orange
  • Orange juice concentrate, 2/3 cup
  • 1 small sweet red pepper (sliced julienne)
  • Red pepper flakes (crushed), 1/2 teaspoon
  • Sugar, 1/4 cup
  • Salt, 1 teaspoon
  • Bamboo sushi mat

Instructions:

 

Step 1.

In a saucepan, rinse the rice several times with cold water until the water is clear. Add two cups of water to the pot and let stand for 30 minutes.

Step 2.

Place the pot over medium heat. Cover the pot with a lid and bring it to a boil.

Step 3.

Reduce heat to low and continue until water is absorbed and rice is tender. 10 minutes. Turn off the heat. Cover and let stand for 10 to 15 minutes.

Step 4.

Stir the vinegar, sugar, and salt in a small bowl until the sugar dissolves.

Step 5.

Put the rice in a shallow bowl and sprinkle with 1/3 cup of the vinegar mixture. Stir the rice with a wooden kitchen spatula or slicing spoon until it cools. Cover the rice with a damp cloth.

Step 6.

Bake the chicken and cool. Once cooled, slice the chicken into strips.

Step 7.

Mix juice concentrate, ginger, pepper flakes, soy sauce, and oil; set 1/2 cup aside to serve. Add the remaining orange mixture to the chicken.

Step 8.

Place plastic wrap on top of the sushi mat. On it, spread 1/4 cup of the almonds evenly on a 9-by-6-inch rectangle. Dampen your hands with the remaining vinegar. Place the rice on top of the almonds in a thin even layer.

Step 9.

Add a small amount of chicken mixture, green onions, red peppers, and orange strips 1-1/2 inches from the bottom of the rectangle. As you roll up the rectangle, make sure the rice filling is covered by the bamboo mat.

Step 10.

Using a mat, squeeze the roll into a compact shape. The roll is ready and can be cut into 1-1/2-inch slices.
