The lamb is marinated overnight with fresh rosemary, garlic, mustard, honey and lemon zest. The meat is very tender and flavorful.

Ingredients:
- 1 teaspoon coarse sea salt
- ¼ cup honey
- 2 tablespoons mustard
- 2 tablespoons chopped fresh rosemary
- 1 teaspoon freshly ground black pepper
- 1 teaspoon lemon zest
- 3 garlic cloves, minced
- 2.5 kg lamb
Instructions:
Step 1:
In a small bowl, combine honey, mustard, rosemary, ground black pepper, lemon zest and garlic. Mix well and apply the marinade over the meat. Cover and marinate in the refrigerator overnight.
Step 2:
Preheat the oven to 230 degrees C.
Step 3:
Place the meat in the oven, sprinkle with salt to taste.
Step 4:
Bake at 230 degrees C for 20 minutes, then reduce the temperature to 200 degrees and bake for another 55 to 60 minutes for medium rare. The core temperature should be at least 63°C. Let the roast rest for about 10 minutes before slicing.
