Quick and easy African tomato and peanut soup

Ingredients:

 

  • 4 tablespoons butter
  • 2 cups chopped onion
  • 450 g fresh mushrooms, chopped
  • 2 teaspoons dried dill
  • 1 tablespoon paprika
  • 1 tablespoon soy sauce
  • 2 cups prepared chicken broth
  • 1 glass of milk
  • 3 tablespoons flour
  • 1 teaspoon salt
  • ground black pepper to taste
  • 2 teaspoons lemon juice
  • ¼ cup chopped fresh parsley
  • ½ cup sour cream

Homemade Hungarian Mushroom Soup

 

Instructions:

 

Step 1:

Heat the butter in a large saucepan over medium heat. Fry the onion in oil for 5 minutes. Add mushrooms and fry for another 5 minutes. Add dill, pepper, soy sauce and broth. Reduce heat to low, cover and simmer for 15 minutes.

Step 2:

In a separate small bowl, whisk milk and flour together. Slowly pour into soup and mix well. Cover and simmer for at least 15 minutes, stirring occasionally.

Step 3:

Finally, add salt, ground black pepper, lemon juice, parsley and sour cream. Mix together and leave to heat over low heat, about 3 to 5 minutes. Don’t boil. Serve immediately.
