Quick and easy chicken soup is perfect if you don’t feel like spending hours on the stove. Light and low-calorie soup is also great for all adherents of a healthy diet.

Prep.: 5 minutes Cooking time: 30 minutes Servings: 8 servings
- 1 tablespoon olive oil
- 1.5 cups chopped celery
- 1.5 cups chopped carrots
- 1 medium onion, cut into small cubes
- ½ teaspoon salt
- Black peppercorns to taste
- 10 cups chicken broth
- 10 sprigs of fresh thyme
- 3 cups finely chopped chicken breast or thigh seasoned with a pinch of salt and pepper
- 250 gr egg noodles
Bring the chicken broth to a boil in a saucepan over medium heat, then add the olive oil, celery, carrots, onions, ½ teaspoon salt, and black peppercorns. Simmer over medium heat for 10 minutes.
Add thyme to chicken broth, bring soup to a boil, reduce heat. Simmer for 3 minutes, then add chicken breast or thighs, cook over medium heat for 10 minutes or until chicken is done. Check the broth for salt and pepper and, if necessary, salt and pepper the broth.
I prefer to cook chicken noodles in a separate pot according to the instructions until al dente and add to each bowl just before serving the soup. You can cook it ahead of time while the soup is cooking.
