Ingredients:

  • 1 cup milk
  • 2 tablespoons vanilla extract
  • 1 cup white sugar
  • 2 tablespoons cinnamon
  • 4 eggs, beaten
  • 1 cup raspberry puree
  • 4 ounces cream cheese, softened
  • Thick slices of brioche or challah bread, will provide a sturdy base for the filling.
  • butter confectioners’ sugar for dusting
  • nutmeg, for topping

Instructions:

Step 1

In a bowl, whisk milk, vanilla, sugar, and cinnamon into the beaten eggs until well blended. Set aside. In a separate bowl, cream together raspberry puree and cream cheese until smooth. Make ‘sandwiches’ by cutting each slice of bread in half and spreading the raspberry-cheese mixture in the center, then top with the other half.

Step 2

Then, fold in the raspberry puree ( raspberries and raspberry syrup ) until they are fully incorporated. Set aside your filling while you prepare the bread.

Step 3

Cut your brioche or challah bread into thick slices, and then use a sharp knife to make a pocket in each slice. Be careful not to cut all the way through the bread. Spoon the cheesecake filling into the pockets, being sure to distribute it evenly throughout each slice.

Step 4

To prepare the French toast batter, whisk together the eggs, milk, cinnamon, and a dash of vanilla extract until the mixture is fully combined. Dip each stuffed slice of bread in the batter, being careful to coat both sides evenly.

Step 5

In a large nonstick skillet, melt butter over medium heat. Once the butter is melted, add in your stuffed, battered slices of bread. Cook each slice for 2-3 minutes, or until golden brown, and then flip to cook the other side.

Step 6

Finally, serve immediately after cooking, topped with confectioners’ sugar and nutmeg or fresh raspberries and a drizzle of raspberry syrup. The dish is best enjoyed while still warm and gooey.
