Ingredients:

  • 2 pounds of boneless pork shoulder. cut into 1-inch cubes.
  • 2 red onions, sliced.
  • 16 ounces vegetable physalis, peeled, washed, and cut in half
  • 2 jalapeño peppers, peeled and seeded and cut in half
  • 1/2 cup green chilies (hot or spicy, or a mixture of both)
  • 2 garlic cloves
  • 4 tablespoons rapeseed oil
  • 5 cups chicken broth
  • 1 cup chopped fresh coriander leaves
  • 10 warmed wheat tortillas

Instructions:

 

Step 1.

Preheat the oven to 400 degrees Fahrenheit.

Step 2.

In a large bowl, mix onion, physalis, jalapenos, green chili peppers and garlic with 1 tbsp. olive oil and place on a baking tray.

Step 3.

Bake until vegetables are soft and toasted, about 20-30 minutes, stirring twice while baking.

Step 4.

Meanwhile, in a large roaster over moderately high heat, heat vegetable oil. In batches, fry the pork until crispy.

Step 5.

Then put all the roasted pork into the cauldron and pour in the chicken broth. Add the roasted vegetables, cover the roaster with a lid, and place in the oven. Bake until the pork is very soft, about 1 hour and 30 minutes.

Step 6.

While the pork is cooking, put the cilantro in a food processor. Add 2 tablespoons of water and chop.

Step 7.

Take the pork out of the oven and stir in the mashed cilantro. Salt and pepper to taste. Serve with warm wheat tortillas.
