Vegetarian chili soup

Great veggie soup recipe. Do not be afraid of a large list of ingredients, all you have to do is mix them and the soup is ready! Great alternative for vegetable lovers

 


Prep.: 15 minutes  Cooking time: 1 hour  Servings: 8 servings


Ingredients:

  • 1 tbsp olive oil
  • ½ medium onion, finely chopped
  • 2 bay leaves
  • 1 teaspoon ground cumin
  • 2 tablespoons dried oregano
  • 1 tablespoon salt
  • 2 celery stalks, chopped
  • 2 green bell peppers, chopped
  • 2 bell red peppers, chopped
  • 3 cloves minced garlic
  • 100 g chopped green hot pepper
  • 350 g onion soup
  • 800 g canned tomatoes, chopped
  • ¼ cup chili spice
  • 1 tablespoon ground black pepper
  • 500 g canned beans
  • 400 g canned peas
  • 400 g canned corn

Instructions:

Step 1

Heat the olive oil in a large saucepan over medium heat. Add onion, bay leaf, cumin, oregano, salt. Simmer and stir until the onion is soft, then stir in the celery, green peppers, red peppers, garlic and chili peppers. When the vegetables are steamed, add the onion broth. Reduce heat to low, cover pot and simmer for 5 minutes.

Step 2

Add the tomatoes to the pot. Season with chili powder and pepper. Add beans, peas. Bring to a boil, reduce heat to low and simmer for 45 minutes. Stir in corn and continue cooking 5 minutes before serving.
