How To Make Butter Chicken At Home: Easy Recipe

Cut the chicken breast into strips
Combine all the ingredients for the marination and marinate the chicken in the fridge for 15-20 mins.
Roughly cut the tomatoes.
Roughly dice the onion. Red or brown onion may be used alternatively.
Heat pan to medium-high heat and add the oil
Pan-fry the chicken just to get color. These can also be browned in the oven.
Once you get the color that you want, brown with a little bit charred, transfer it into a separate container.
Using the same pan, add the oil and butter.
Add in the onion and sweat until translucent.
Then add the sliced tomatoes and cashew nuts and give a little stir.
Then add the other ingredients for the gravy.
Adjust the spiciness by adjusting the amount of the chili powder.
Stir and let it simmer for 15-20 mins or until the nuts are soft.
Transfer into a container and blitz it into a puree.
You may also use a food processor for this step
Strain it back into the pan.
This step yields a smooth and velvety texture of the gravy.
Add in the butter and cream.
Add back the chicken
Add the kasoori methi or dried fenugreek leaves.
Stir and let it simmer for about 5-7 minutes until the chicken is well re-heated.
Plate up and garnish with more cream and kasoori methi.
It is usually served with naan bread or rice.
