An hour later, the marinade is removed, simmered, and poured over the crabs again in a process that is repeated several times before the dish is cooled and consumed. A staple of Korean cuisine, kimchi is a traditional side dish made from pickled and fermented vegetables-most commonly cabbage and Korean radish-with various seasonings such as chili powder, green onions, garlic, ginger, and jotgal (salted seafood). There are hundreds of varieties of kimchi prepared using various vegetables as the main ingredients. Kimchi is considered the national dish of both North and South Korea. Kimchi is usually served as one of the many banchan side dishes at the beginning of your meal.
