Shrimp and White Bean Salad Recipes

Light protein salad of fried shrimp with white beans, cherry tomatoes and arugula. This combination of products is ideal for those who follow their figure. It will take you no more than 20 minutes to prepare this salad.

Prep.: 10 minutes  Cooking time: 20 minutes  Servings: 4 servings


 

Ingredients:

 

  • 16-20 peeled king prawns
  • 2 tablespoons olive oil
  • 2 cans of white beans in their own juice, washed and drained
  • 1 cup cherry tomatoes, cut in half
  • ½ cup finely chopped red onion
  • ¾ teaspoon grated lemon zest
  • 3 handfuls of arugula leaves

For sauce:

  • 3 tablespoons red wine vinegar
  • ½ cup olive oil
  • 3 cloves minced garlic
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

 

Instructions:

Step 1:

Heat 2 tablespoons olive oil in a cast iron skillet or heavy bottomed skillet. Fry the peeled shrimp in small batches until fully cooked and golden brown. Transfer the cooked shrimp to a bowl.

Step 2:

Wash and dry beans. To the bowl of shrimp, add chopped cherry tomatoes, diced red onion, lemon zest, and arugula leaves.

Step 3:

In separate bowls, whisk together red wine vinegar, olive oil, pressure, salt and pepper. Getting dressing order a salad and nibble gently. Ready salad let’s go to the table.
