  • Garlic (granules), 2 teaspoons
  • Salt and pepper (to taste)
  • Chicken breast, 1 lb
  • Chicken stock, 1 ⁄2 quart
  • Marsala wine, 2 -4 oz
  • White wine, 2 oz
  • Heavy cream, 1 ⁄2 quart
  • Fresh basil (chopped), 1 tablespoon
  • Parmesan cheese (grated), 2 tablespoons
  • Garlic butter, 2 oz
  • Parmesan cheese (for garnish)
  • Fresh parsley (chopped)
  • Rigatoni pasta, 1 lb

 

Instructions:

 

Step 1.

Heat oil well in a frying pan, add onions, and fry until they caramelize.

Step 2.

Fry the mushrooms with balsamic vinegar.

Step 3.

Add the caramelized onions to the mushrooms.

Step 4.

Sprinkle salt and pepper over the mixture.

Step 5.

Add garlic and chicken.

Step 6.

Add chicken broth, marsala, and white wine. Cook until reduced by half.

Step 7.

Add cream and bring to a boil.

Step 8.

Reduce heat and simmer slowly to remove all impurities.

Step 9.

Prepare the rigatoni, drain, and add to the chicken mixture in the pot. Stir well.

Step 10.

Add basil and parsley mixture, parmesan cheese, garlic oil, salt, and pepper

Step 11.

Add more marsala for flavor. Serve the pasta garnished with parmesan shavings and chopped parsley.
