A wonderful and flavorful dessert. This cupcake is great for a quick breakfast or you can serve it warm with butter as an accompaniment.

Ingredients:
- 1 glass of vegetable oil
- 2 cups white sugar
- 2 eggs
- 2 tablespoons mayonnaise
- 6 very ripe bananas, mashed
- 3 cups flour
- ½ teaspoon salt
- 1 teaspoon baking powder
- ½ cup chopped walnuts
- 2 teaspoons of soda
- 1 cup chocolate chips
Instructions:
Step 1:
Preheat the oven to 175 degrees C. Lightly grease the baking dishes.
Step 2:
In a large bowl, whisk together fat and sugar. Whisk in the eggs one at a time, beating well with each addition. Stir in mayonnaise and bananas. Mix flour, salt, baking powder and soda together. Mix flour mixture and banana. Add chocolate chips and walnuts.
Step 3:
Bake at 175 degrees C for approximately 50 to 75 minutes. Refrigerate 20 minutes before serving.
